How to cook Githeri using an Electric Pressure Cooker.

Among the numerous benefits of having an electric pressure cooker or a manual pressure cooker is the ability to prepare meals in the shortest time possible. I particularly enjoy cooking with electric pressure cookers or Instant pots as they are considered safer to use compared to the manual pressure cooker.

Today I am making Githeri and I will be using my Electric Pressure Cooker. I will take you through all the steps involved in the preparation. Githeri is a Kenyan traditional meal made of maize and beans which are usually boiled until soft. If you are using a charcoal burner/jiko it normally takes between 2-3hrs depending on the quantity you are preparing. On the other hand, if you are using an Electric pressure cooker it takes only 20 -30 minutes to prepare up to six cups of Githeri.

Githeri has no specific guide in terms of the maize and beans ratio so you can always play around with the ratio and customize it to your liking.

Preparation.

You will need to soak your maize and beans incase you are using the dry cereals until they are well rehydrated and soft for a shorter cooking time.

INGREDIENTS

  • 1.5 Cups of Beans ( I used Yellow beans)
  • 2 Cups of fresh Maize (Decombed).

METHOD

  • Step 1: Add in the maize and beans into the electric pressure cooker/instant pot/nutri cook pot.
  • Step 2: Add hot water until the maize and beans are just slightly covered.
  • Step 3: Close the lid and turn the pressure cooker valve into the sealing position.
  • Step 4: I am using the Von Electric Pressure Cooker ( New Model ). Input the pressure cooker settings by pressing [ Pressure cook ] then press the minus sign [ ] to reduce the time to 20 minutes then press [ Start ].

  • Note that if you are using the older pressure cooker version you might need to start by pressing [ Manual ] then [ Cooking Timer ] then press the minus sign [ ] then set the time to 20 Minutes. Wait 10 seconds and the pressure cooker will automatically start cooking.
  • Step 5: After 20 Minutes, move the sealing valve to ventilate to release the pressure. Once the pressure is released open the lid and check if the maize and beans are well cooked. If there are still some hard grains, pressure cook again for 5-8 minutes.
  • Step 6: Pour everything out into a large bowl or sufuria. Don`t mix the githeri if you were making a big batch because you might crush the beans.
  • Step 7: All done. You can store the githeri in the freezer or saute some of it with onions and potatoes.
