Black Eyed Beans / Kunde Beans

Coconut Black Eyed Beans /Kunde Beans

Black eyed beans aka Cowpeas/goat beans or Kunde/Thoroko beans in my native language come in two colours, red or white.

They are delicious when prepared with rice, ugali or chapati.

PREPARATION

For dinner, I am preparing 1.5 cups of black eyed beans/Kunde beans. I usually soak my cereals for between 6 – 24 hrs to reduce some of those indigestible sugars that cause gas/flatulence & bloating. Soaking also helps to get rid of trapped weevils and saves alot of cooking time.

Soaked Black Beans/Kunde

In addition as the beans are soaking you can be finishing up on some other work at home or in the kitchen.

Once 24 hrs has lapsed, rinse the beans thoroughly and start cooking. They sould be swollen and soft.

Swollen Black Eyed Beans after Soaking
