I recently went meat shopping at Burma Market along Jogoo road. I bought fresh Matumbo/beef tripe among other beef cuts and I couldn`t wait to get home to prepare this meal for my family.
Matumbo/Beef tripe is the stomach lining of a cow. The preparation involves thoroughly washing the Matumbo/tripe until the water is clear and there’s little or no odour from the meat. I personally do not like eating tripe but my family loves it especially with ugali and some greens. I prepare it in a very simple and delicious way using very basic ingredients and spices.
The recipe is simple and easy to follow. I used and electric pressure cooker to prepare the meal because of the reduced cooking time and the pressure cooker does not release any odour when boiling the Matumbo/tripe. Boiling first helps to tenderize the matumbo/tripe.
If you do not have the pressure cooker you can always prepare the meal on a normal sufuria/saucepan using gas stove or jiko.
Let`s begin;
INGREDIENTS
- 300gms of Beef Tripe/Matumbo
- 1 Red Onion
- 1 Green Pepper (Hoho)
- 5-6 Garlic Cloves
- 2 Tomatoes
- 1/2 Beef Cube
- Preferred spices
- 1 Tsp of Spanish Paprika
- 1/4 Tsp of Salt
- 1 Tsp of Coriander powder
- 1/4 of Black Pepper
- 1 Tsp of Royco
- Salt to taste
- Water

- Step 1: Thoroughly wash and clean the tripe/matumbo until the water is clean.
- Step 2: Cut the Matumbo/Tripe in small bite size pieces or leave it whole then boil the matumbo/tripe until soft. I used a Von Electric Pressure cooker to boil my tripe/matumbo because it`s faster and releases no odor when cooking. I input 1 Hour cook time. Incase you are using a normal gas stove, boil the tripe/matumbo for 2+ hours or until the matumbo is soft.
- Step 3: Once cooked, drain the excess soup/water and set aside.
- Step 4: Clean the pressure cooker pot and add some cooking oil. Add in the matumbo/tripe sear it a little for the tripe to brown.
- Step 5: Add the onions and green peppers. Cook until golden brown.
- Step 6: Add in the Garlic. Mix and cook for 1 minute.
- Step 7: Add in the tomatoes together with the preferred spices. I used (1 Tsp Spanish Paprika, 1/4 Tbs of salt, 1/4 Tsp of Black Pepper Powder, 1 Tsp Coriander Powder, 1 Tsp of Royco). Mix well.
- Step 8: If using an electric pressure cooker.. Add 1-2 cups of water/ soup. Mix well, close the pressure cooker lid and input 30-40 minutes. After pressure cooking open the lid mix and adjust on the spices/salt. If using a sauce pan/sufuria, add water 2 cups of water, cover and boil the matumbo/tripe for 1 Hour or until the tripe is soft and well blended with the stew.
- Step 9: Add in Dhania/cilantro leaves.
- Step 10: Serve the Matumbo with ugali, rice or chapati.
